Sodexo is seeking an Executive Chef 2 for Rensselaer Polytechnic Institute Catering Department. RPI is a private university focused on business and located in Troy, New York. The Executive Catering Chef needs to be a talented culinarian with exceptional organizational and leadership skills. The selected individual will be expected to produce both large volume and high-end menu items and be comfortable with campus community members and customer interaction as well as receptive to client feedback. This position will manage the culinary operations for all on and off campus catering productions. The Catering Executive Chef will be very hands on, and an integral department leader involved in the menu planning process, labor schedules, production, marketing plan, and much more.

The successful candidate will:

  • VIP level guest service experience & ability to produce high-volume gourmet cuisine is a must.
  • Ability to design custom menus with flare and precision.
  • Responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecasting.
  • Ensure Sodexo Culinary standards including recipe compliance and food quality.
  • Have high expectations for customer service and quality of food.
  • Have the ability and willingness to develop and train frontline employees.
  • Have a passion for food and innovation.
  • Have the ability and willingness to develop and motivate team members to embrace culinary innovations.
  • Ensure food safety, sanitation, and workplace safety standard compliance.
  • Have working knowledge of automated food inventory, ordering, production, and management systems.

Position Summary:

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.
Key Duties

Qualifications & Requirements:

Basic Education Requirement - Associate's Degree or equivalent experience
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
