Job Description
SUMMARY: The primary responsibility of this position is to manage and oversee all food and beverage operations of the Bar and Grill, Dancing Waters Lounge and Bingo Concession, and all activities of the department’s staff.
DUTIES AND RESPONSIBILITIES:
1. Conducts constant monitoring of internal operations including daily operations, scheduling and management of policies and procedures.
2. Is responsible for the management and performance of the department staff including hiring, scheduling, performance reviews, disciplinary actions, payroll activities and training and development activities.
3. Ensures that all department staff is providing exceptional guest services to assist in guest relations, profitability of all departments and the overall profitability of the Lake of the Torches Resort Casino.
4. Respond to guest comments and criticism in a constructive and positive manner, looking at such as an opportunity to build guest loyalty. Educate and empower subordinate supervisors and associates to act in a similar capacity.
5. Establishes and maintains Point of Sale menus and manages all associated activities.
6. Adheres and manages all franchise agreements according to contractual agreements and standards.
7. Manages and maintains inventory control and inventory levels with department staff to ensure that products are in stock and supplies are available and are appropriate to levels of business.
8. Recommends the addition or deletion of new products or product suppliers to enhance guest service offerings or control cost expenditures.
9. Ensures compliance with Tribal Sanitation Health Regulations and that the procedures are followed to ensure the health and safety of employees and guests. Address any and all potential violations in a timely manner.
10. Is responsible for the establishment and management of an alcohol awareness and responsible service program based on state and national programs and program parameters.
11. Works closely with supervisors to analyze department performance and implements enhancements to maximize revenues.
12. Prepares and submits reports related to the department activities and financial results for review by the Food and Beverage Director.
13. Is responsible for the development and adherence to the budget including forecasting and budgeting revenue and expenses.
14. Participates in promotional activity planning and development to increase guest service offerings and enhanced levels of revenue generation.
15. Is responsible for coaching, counseling and mentoring employees to achieve enhanced performance, employee satisfaction and employee career development.
16. Attends and participates in Lake of the Torches Resort Casino tactical team meetings.
17. Responsible for communicating with administration, managers and associates changes and enhancements in respect to the department or guest services in a timely and efficient manner.
18. Resolves associate interdepartmental or guest disputes in accordance with established policies and procedures.
19. Participates in meetings for department managers.
20. Performs other duties as assigned.
SUPERVISORY RESPONSIBILITIES: Responsible for the direct supervision of three supervisors. Is responsible for the indirect supervision of approximately 40 associates. Must be internally motivated and detail oriented and have a passion for teaching others.
SUPERVISION RECEIVED: Operates independently with supervision received from the Food and Beverage Director.
POSITION RELATIONSHIPS:
Internal: Frequent contact with administration and management staff. Occasional contact with associates at all levels within all departments of the organization.
External: Frequent contact with guests. Occasional contact with suppliers, sales representatives and agency regulators.
POSITION RESPONSIBILITIES:
1. Planning and Scheduling: Responsible for maintaining adequate staffing levels ensuring that exceptional guest satisfaction standards are achieved. Plans and recommends new products, equipment purchases, menu items and guest promotions. Is responsible for planning and scheduling own work activities.
2. Budgeting and Forecasting: Is responsible for the development and adherence to the department’s budgets, including forecasting and budgeting revenue and expenses.
3. Responsibility for Establishing Objectives, Policies or Standards: Responsible for establishing and maintaining department objectives, standards and policies and procedures for review by the Food and Beverage Director.
4. Impact of Decisions: Decisions may create an impact on guest services, associate relations or management policies that may result in a diminishment of credibility, loss of guest or associate good will, unnecessary expenditures or expose the Lake of the Torches Resort Casino to adverse legal activities.
EDUCATION: A High School diploma or equivalent is required. An associate degree in hotel, hospitality or other related field is preferred.
EXPERIENCE: A minimum of five years supervisory/managerial experience in a high volume, full service, quality restaurant environment is required demonstrating progressively responsible experience. Supervisory/Managerial experience must include people management, budget development, Micros or similar POS system and Berg or similar beverage system experience.
KNOWLEDGE, SKILLS AND ABILITIES: Must possess excellent interpersonal, communication, delegation, problem solving, people and project management skills. Must be familiar with POS and related software and have a thorough knowledge of hygiene, sanitary controls, inventory and supplier purchasing. Must be able to manage and maintain confidential and sensitive information with diplomacy and tact. Must maintain a professional demeanor in stressful situations as necessary.
WORK ENVIRONMENT:
Work Conditions: The majority of position responsibilities are performed within the food and beverage areas and in an office environment.
Exposure to Hazards: May be exposed to situations where hazardous chemicals, spills, wet floors or guest behaviors may create undesirable conditions.
Physical Requirements: Must be able to lift up to 75 lb. and walk, sit, stand, or bend for extended periods of time.

The manner in which the employee relates to fellow employees, customers and visitors is considered parallel in importance to technical knowledge and ability. OTHER: Must possess a bartending license and a ServSafe certificate or have the ability to obtain these and attend responsible beverage service class within 90 days of hire date. Must be able to work irregular hours, weekends, holidays and be available for call in to work on short notice. Must attend all mandatory meetings and participate in departmental training and development sessions.
